We don’t use pre-made curry bases. We don’t open a tub and add protein. Every sauce at The Radhuni starts with whole spices, fresh onions, ginger, garlic, and tomatoes — built layer by layer into something that has genuine depth and complexity.
This takes more time. It requires more skill. But it produces food that tastes fundamentally different from what comes out of a kitchen that’s cutting corners. Once you’ve tasted the difference, it’s hard to go back.
Most Indian restaurants in Scotland serve food rooted in Punjabi and North Indian cooking — the tikka masalas, kormas, and baltis that have become familiar across the UK. These are great dishes when made well, and we make them well.
But The Radhuni also draws on the culinary traditions of Bangladesh and Bengal — a cuisine that’s less well known in Edinburgh but equally rich and distinctive. Our Bengali fish curry, in particular, is something you’re unlikely to find anywhere else of this quality in the area. It’s made with proper technique, the right spices, and fish sourced with the same care as everything else we serve.
